Course Description

The goal of this course is to discover the science and art behind the manufacturing of three widely consumed commodities, namely chocolate, coffee, and tea. While these are products commonly enjoyed by consumers, the quality, safety, and sensorial aspects associated with these products are not often understood and appreciated. Thus, this course will deal with the steps involved in making coffee, chocolate, and tea and explain the microbiological, chemical, and physical aspects associated with each step.
